First, trim off the prawn's head, legs, and antennae. Also, clean out the gills inside the prawns, then remove the internal organs as well.
Sprinkle some salt and starch; this will create a crispy shell when frying.
Mix everything well by hand.
Chop some spring onions and mince a whole garlic bulb.
Prepare a sauce in advance: add mustard to taste, 1 tablespoon of starch.
2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of salt, and some water.
Heat a little oil in a pan, then add the prawns and fry until they change color.
Next, add the minced garlic and the prepared sauce.
Finally, sprinkle with chopped spring onions and serve.
