First, wash 100g of sand ginger to remove dirt, crush and finely chop it; crush and finely chop 4 red shallots.
Mix the chopped sand ginger and shallots, then pour in 3 tablespoons of hot oil.
Add 2 tablespoons of soy sauce, 1/3 teaspoon of salt, and 1 tablespoon of oyster sauce, mix well and set aside.
Cut the 3 chicken drumsticks into pieces, pat dry with kitchen paper, and set aside.
In a clay pot (preferably one that can be dry-heated), pour 1 tablespoon of oil, heat on high, and add the garlic cloves to stir-fry until fragrant.
Add the raw chicken pieces, cover the pot, and cook on high heat for 6 minutes.
Uncover the pot, evenly spread the sand ginger mixture over the chicken.
Cover the pot, cook on medium heat for 5 minutes, then pour a circle of white wine around the lid, and simmer for another 2 minutes.
