The method is quite simple. First, brew a pot of green tea with hot water. Wait for the tea leaves to fully steep; we’ll need it later.
Soak the pork ribs in cold water for half an hour, then pat them dry.
Heat an appropriate amount of oil in a pan, then fry the ribs. Fry over medium heat until both sides of the ribs turn golden brown.
Then pour the brewed tea into the pan, covering the ribs.
Add simple seasonings : 2 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, 1 tablespoon of oyster sauce, and some rock sugar.
After bringing it to a boil, cover the pot and simmer on low heat for half an hour or more.
Once the ribs are tender, increase the heat to thicken the sauce.
Add a bit of salt to taste if needed, and it's ready to serve!
