1 spoonful of salt 2 to 3 spoonfuls of soy sauce 1 spoonful of oyster sauce 3 to 4 spoonfuls of white vinegar 1/2 spoonful of dark soy sauce

First, peel the potatoes. Cut them into thin slices, then into shreds.

Soak the shredded potatoes in water to remove excess starch.

Next, prepare the other ingredients. Cut a green chili pepper into thin strips; Cut some scallions into thin strips or chop them finely ; Rinse dried chili peppers.

Set the prepared ingredients aside.

Boil water in a pot, then add the shredded potatoes. Cook for about 20-30 seconds, then remove (you can place them in cold water for a crisper texture).

Heat oil in a wok. Add the dried chili peppers, minced garlic, and scallions. Stir-fry until the dried chili peppers are slightly charred.

Add the shredded potatoes and stir-fry for a few moments. Then add the green chili strips and continue to stir-fry.

Now, it's time to season the dish. Add a spoonful of salt, two to three spoonfuls of soy sauce, a spoonful of oyster sauce.

Stir everything well, then add three to four spoonfuls of white vinegar and mix thoroughly.

Finally, you can add half a spoonful of dark soy sauce for color. The dish is now ready to be served.
