450g fresh beef
3 small red chili peppers, sliced into rings
6-7 slices of ginger
2 pickled chili peppers
5-6 cloves of garlic
5-6 sprigs of cilantro
3 stalks of celery
Marinade
½ tablespoon salt
1 tablespoon starch
1 tablespoon cooking wine
1 tablespoon light soy sauce
A small amount of white pepper powder
Seasoning
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
First, slice the beef. When slicing the beef, be sure to cut against the grain.
After slicing, put the beef in a bowl for marinating. Add a pinch of white pepper, half a spoon of salt, one spoon of cornstarch, and one spoon of cooking wine. Add one spoon of light soy sauce, then mix well by hand. Add a little oil to lock in the moisture of the beef.
Continue mixing well by hand.
Slice 3 small chili peppers into rounds and cut 6-7 slices of ginger, 2 pickled chili peppers into rounds. Crush 5-6 cloves of garlic and peel them. Then, Cut 5-6 cilantro stalks and 3 Chinese celery stalks into sections. Now, the side ingredients are ready.
Add a little oil to the pan and heat it on high. Once the oil starts smoking, add the marinated beef.
Stir-fry the beef until both sides change color, then quickly remove it from the pan (don’t cook the beef too long, or it will become tough).
Add a bit more oil to the pan, then add the prepared ingredients and stir-fry until fragrant.
Turn off the heat and season with one spoon of light soy sauce, one spoon of dark soy sauce, and one spoon of oyster sauce.
Stir it a few times, then add the Chinese celery and stir-fry until cooked. Add the beef back in, stir-fry briefly to coat the beef with the seasoning.
Turn off the heat, add the cilantro, stir a few more times, and it’s ready to be served!
