Julienne a section of green onion. Slice and julienne half a ginger root.
Add three tablespoons of base oil to the pan. Place the prawns in the pan and fry until golden on one side, then flip them.
Press down on the prawn's head to extract the prawn oil from the brain. This step ensures the prawns are cooked to a deliciously bright red and flavorful.
Add the julienned green onion and ginger to the pan to remove any fishy smell.
Next, add half a bowl of water, half a tablespoon of sugar, and one and a half tablespoons of salt.
Cover the pan and braise for 3 minutes, then the dish is ready to be served.
